Cucumber And Dill Salad

Ingredients:

1/2 head romaine, washed and cut into
bite-size pieces
1/2 head boston lettuce, washed and cut into
bite-size pieces
1/2 head watercress, washed and cut into
bite-size pieces
1/2 large cucumber, peeled and thinly sliced
1 tbsp. chopped dill

DIJON DRESSING
2 egg yolks
7 tbsp. Dijon mustard
1/2 cup red wine vinegar
2-1/2 cups olive oil


Instructions:

Toss greens and cucumber together. Sprinkle lightly with dill. Add 1 oz. of Dijon Dressing per portion and toss well. Turn onto chilled plates and serve. DIJON DRESSING Place yolks in bowl, add mustard and whisk a few minutes. Add vinegar and whisk again. Slowly add oil, whisking all the time. This fresh green salad is crisp and cool looking. The Dijon Dressing gives it a piquant taste to match its appearance.
