16 oz. water
2-1/2 tbsp. arrowroot
3 oz. orange juice
2 oz. lemon juice
1 oz. grapefruit juice
1 oz. lime juice
1 tsp. each orange, lemon, grapefruit, lime
zests, blanched
1 oz. butter


Combine sugar, water and arrowroot in saucepan; heat until thickened. Remove from heat; stir in remaining ingredients. Let cool.
