Gingered Carrot Coulis

2 large carrots, sliced
1 ginger root, sliced in 1-in. segments
1/2 cup onions, pared, chopped
2/3 cup oil
1 tbsp. honey
1 tsp. salt
1 tsp. pepper
white wine, as needed
2 tbsp. chives, chopped


Place carrots, ginger, onions and small amount of oil in pan; roast at 350 degrees F until vegetables are tender. Let cool. Place in blender or food processor; add honey, salt and pepper. Blend until smooth. Add oil slowly, blending to incorporate. Blend in wine as needed to create desired consistency. Stir in chives.
