1/4 cup chopped onion (about

1/3 cup orange juice (about
1 medium orange)
2 tablespoons red wine vinegar or
cider vinegar
1/4 to
1/2 teaspoon ground cumin
1/4 teaspoon pepper
1 (16-ounce) can reduced-sodium
kidney beans, drained


Mix all ingredients in glass or plastic bowl. Cover and refrigerate about 2 hours or until chilled. 6 servings
