Instructions:TO SERVE Place sauteed spinach and shallots in center of plate. Arrange roasted peppers on plate; top with juliennne vegetables. Fan four lamb medallions along left side of plate; garnish with roasted garlic. Fan three corn cakes along right side of plate. Sauce meat and vegetables as needed.
