1-3/4 oz. white wine vinegar
1/4 oz. Dry English mustard
4 oz. sugar
1 papaya, pared, seeded, sliced 1/2-in. thick


Combine water, vinegar, mustard and sugar; mix well. Heat until sugar is dissolved; pour over papaya slices. Cover; refrigerate for 2-1/2 hours. Drain prior to service.
