Pesto Sauce

2 cups basil leaves
1/4 cup parsley
1/4 cup spinach
1/4 cup pine nuts, toasted
1/4 cup olive oil
2 tbsp. Pecorino Romano, grated
2 tbsp. Parmesan, grated
6 garlic cloves, pared
salt and white pepper, to taste
water, as needed
1 cup heavy cream


Place all ingredients except water and cream in blender or food processor; process until smooth. Add water as needed to create desired consistency. Place in saucepan; heat to simmering. Stir in cream.
