Roast Pork with Dried Fruit Compote

12 oz. boneless pork loin
salt and pepper, to taste
Calvados, to taste
1-1/2 tsp. dried apricots, diced
1-1/2 tsp. prunes, diced
1-1/2 tsp. raisins, diced
1-1/2 tsp. dried bananas, diced
1 tsp. mint, chopped
1/2 tsp. brown sugar
2 tsp. cider vinegar


Place pork on flat surface; season. Moisten with Calvados. Combine remaining ingredients except oil. Spoon down center of pork. Roll pork around fruit mixture; secure with twine. Heat oil until hot; add pork roll. Sear on all sides. Place in roasting pan; roast at 375 degrees F for 20 minutes or to internal temperature of 150 degrees F.
