Black Bean Cakes

6 cilantro sprigs
3 Kalamata olives, pitted
avocado, pitted, peeled, as needed


TO SERVE For each serving, place biscuit cutter with same diameter as bean cakes on plate. Lay bean cake inside cutter; spoon salsa over to 1/4-in. thickness. Repeat for second layer; top with third bean cake. Gently remove biscuit cutter. Top bean cakes with yogurt sauce and small amount of salsa. Garnish with cilantro sprig. Cut olives in half lengthwise. Slice avocados into fans. Use as plate garnishes.
