Sunchoke and Spinach Salad

Lime-Yogurt Dressing
2 cups shredded spinach
1 cup finely chopped peeled
Jerusalem artichokes (about
4 medium)
1 cup chopped carrots (about
2 medium)
1/2 cup chopped red bell pepper (about
1 small)
1/2 cup finely chopped red onion (about
1/2 medium)
2 cups shredded lettuce


Sunchokes, or Jerusalem artichokes, are paired with lime for a refreshing taste. When entertaining, serve on shredded lettuce, as we've suggested. For a more casual meal, toss the lettuce in with the other ingredients. Prepare Lime-Yogurt Dressing in large glass or plastic bowl. Add remaining ingredients except lettuce; toss. Cover and refrigerate about 2 hours or until chilled. Serve on lettuce. 6 servings
