6 cups green cabbage, shredded
1 large green bell pepper, chopped
1 large red bell pepper, chopped
1/2 cup fresh coriander, chopped
1 large clove garlic, mashed
1 jalapeno pepper, chopped
1 onion, chopped
1 cup olive or corn oil
1/2 cup red wine vinegar
1 tsp. sugar
salt and pepper, to taste


Grate cabbage. Chop bell peppers and coriander. Mix together. Make a dressing by combining the remaining ingredients. Toss with cabbage mixture and allow to stand for one hour before serving.
