1/2 cup sugar
6 egg yolks
2 cups milk
1 vanilla bean


Combine half of sugar with egg yolks in top half of double boiler; whip lightly. Place milk in sauce pan; sprinkle in remaining sugar. Do not stir. Add vanilla bean; heat to boiling. Gradually whisk boiling milk into egg yolk mixture. Heat, stirring, over boiling water; cook until sauce coats spoon.
