Shrimp Mousse
Tagliatelle of Vegetables
Spiced Lentils

1 English cucumber
salt, to taste
1 chicory head, torn into leaves


TO SERVE Using mandoline, cut cucumber into lengthwise slices 1/8-in. thick; slice ends at angles. Sprinkle with salt; let stand for 30 minutes. Rinse; drain. Toss tagliatelle of vegetables with vinaigrette; place on plate at 12 o'clock position; arrange cucumber cordon around. Garnish with chicory. Place shrimp mousse at 6 o'clock position. Ladle lentils onto plate.
