Pierre Franey s Broiled Tomatoes

Ingredients:

6 medium tomatoes
24 slivers garlic
salt to taste if desired
freshly ground pepper to taste
3 Tbsp olive oil
4 Tbsp Parmesan cheese -- grated
4 Tbsp fresh basil -- chopped


Instructions:

1. Preheat the broiler to high, 500 degrees. 2. Cut the tomatoes in half and arrange, cut side up, in a baking dish. Insert 2 garlic slivers in each half. 3. Sprinkle with salt, pepper and olive oil. Sprinkle with the cheese. 4. Place under the broiler for about 5 minutes until bubbling and the garlic tips start to brown. Remove garlic, sprinkle with basil and serve. Yield: 6 servings.
